Tropical Cucumber Salad

I am always trying to eat healthier and stay away from the cookies, candy, chips, etc.  I like to try new combinations of fruit and vegetables so I will definitely be trying out this recipe.

Tropical Cucumber Salad

Ingredients
  • 3-5 teaspoons fish sauce, (see Shopping Tip)
  • 1 teaspoon freshly grated lime zest, plus more for garnish
  • 2 tablespoons lime juice
  • 1 tablespoon canola oil
  • 2 teaspoons light brown sugar
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon crushed red pepper
  • 1 medium English cucumber, cut into 3/4-inch dice
  • 1 avocado, cut into 3/4-inch dice
  • 1 mango, cut into 3/4-inch dice (see Kitchen Tip)
  • 1/4 cup chopped cilantro

Preparation

  1. Whisk fish sauce to taste, lime zest, lime juice, oil, brown sugar, vinegar and crushed red pepper in a large bowl until combined. Add cucumber, avocado, mango and cilantro; gently toss to coat. Serve garnished with lime zest, if desired.
Shopping Tip: Fish sauce is a pungent Southeast Asian condiment; find it in large supermarkets and Asian markets.

Cilantro Pesto Pasta Salad

This salad sounded really good and extremely easy to make.

Cilantro Pesto Pasta Salad

Ingredients:
  • 1 pound rigatoni or other small pasta
  • 1/2 cup olive oil
  • 1 cup fresh cilantro leaves, washed, loosely packed
  • 2 cloves garlic, crushed
  • 1/4 teaspoon dried oregano leaves
  • 1/4 cup pine nuts
  • 1/2 cup sliced black olives
  • Salt and freshly ground pepper to taste
Directions:
  1. Cook rigatoni according to package directions, drain well.
  2. In blender container, blend oil, cilantro, garlic and oregano until smooth.
  3. Toss pasta with dressing; toss in pine nuts and olives; season to taste with salt and pepper. Cover and refrigerate. Toss again before serving.

Italian Pasta and Tomato Salad

This recipe is just my cup of tea! 

Italian Pasta and Tomato Salad

Pasta Ingredients:
  • 8 ounces (2 1/3 cups) uncooked dried penne pasta

Salad Ingredients:
  • 1/4 pound (1 cup) Cheddar or Monterey Jack Cheese, cubed 1/2-inch
  • 2 medium (2 cups) tomatoes, cubed 1-inch
  • 2 medium (2 cups) zucchini, sliced 1/4-inch

Dressing Ingredients:
  • 1/2 cup Italian vinaigrette dressing
  • 1 tablespoon fresh oregano leaves
  • 1 tablespoon chopped fresh basil leaves
  • Lettuce leaves

Choose vine-ripened tomatoes to pair with penne pasta.
Directions:
  1. Cook pasta according to package directions. Rinse with cold water; drain.
  2. Combine pasta and all salad ingredients in large bowl.
  3. Stir together all dressing ingredients except lettuce leaves in small bowl. Add dressing to salad; toss to coat. Cover; refrigerate at least 30 minutes. Serve salad on lettuce leaves.

Chicken Salad

I love salads!  They are just perfect to make on a hot summer day.

Chicken Salad

Ingredients:
  • 6 boneless, skinless, split chicken breasts
  • 1 cup white wine
  • 1/2 cup chicken broth or water
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried tarragon
  • 1/4 teaspoon dried basil
  • 6 cups torn mixed salad greens
  • 1 can (14 ounces) hearts of palm, drained, cut into bite-size pieces
  • 1 medium tomato, seeded and chopped
  • 1 red onion, cut into thin rings
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon each, dried tarragon, thyme and basil
  • 1/3 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/2 teaspoon crushed red pepper
Directions:
Combine chicken, wine, broth, garlic, tarragon and basil in a 2-quart saucepan. Cover and simmer about 15 to 20 minutes, or until done. Set aside to cool in liquid. Drain chicken and cut into 1-inch strips.
To make dressing, combine vinegar, herbs, olive oil, mustard, garlic, salt, and red pepper in a cruet or a screw top jar. Shake well to blend; refrigerate and let stand at least 15 minutes. Can be made ahead.
Combine salad greens, hearts of palm, tomato, onion and chicken. Toss with chilled dressing, mixing thoroughly. Serve on lettuce lined platter or individual serving plates. Garnish with additional tomato wedges or hearts of palm, if desired.
6 servings.

Alaska Salmon Salad Sandwich

I love salmon!  I am really looking forward to trying this recipe.

Alaska Salmon Salad Sandwich

Ingredients:
  • 15 1/2 ounces canned Alaska salmon
  • 1/3 cup plain nonfat yogurt
  • 1/3 cup chopped green onions
  • 1/3 cup chopped celery
  • 1 tablespoon lemon juice
  • Black pepper, to taste
  • 12 slices bread
Directions:
Drain and flake salmon. Stir in remaining ingredients except pepper and bread. Season with pepper to taste. Spread salmon mixture on half of bread slices; top with remaining bread. Cut sandwiches into halves or quarters.
Serves 6 sandwiches

ABC Sandwich Recipe

It is HOT here in Texas!! So, I decided to surf the net for new recipes that I don't have to cook!  I will be sharing these new recipes with my readers. 

ABC Sandwich

Ingredients:
  • 1 cup mayonnaise
  • 1/2 cup minced scallions
  • 2 tablespoons brandy
  • 1/4 teaspoon coarsely-ground black pepper
  • 18 slices toasted whole-wheat bread
  • Leaf lettuce
  • 12 ounces crab meat, picked over well to remove any shells
  • Tomato slices
  • 12 slices slab bacon, cut in half, cooked crisp and drained
  • 2 avocados, sliced
Directions:
In a small bowl, combine the mayonnaise, scallion and brandy, mixing well. For each sandwich, spread three pieces of bread with a portion of the mayonnaise mixture. Cover the first slice of bread with lettuce leaves, 2 ounces of crabmeat, and one or two tomato slices. Add the second slice of bread, and top with the four half-slices of bacon, a layer of avocado slices, another tomato slice or two, and more lettuce. Cover with the third slice of bread, secure the sandwich with wooden picks, if you like, and slice it in half.
Serve the sandwiches immediately.

How to Fake a Tan: Sunless Tanning Tips

Good Afternoon to all of my readers.  I ran across an interesting article the other day and decided to share it with ya'll.  In the summer, I love to get a suntan.  I like the way my skin looks when it is a darker color.  I'm sure that most of you do also.  But, as we know, it is unhealthy for us to expose our skin to all of those UV rays (even though most of us do it anyway).  Anyway, I came across this article on "How To Fake a Tan: Sunless Tanning Tips.

A great suntan is associated with health and beauty. While a bronze look is desirable, especially in the summer or on holiday , we all know the dangers of the sun's UV rays. Is a temporary tan worth the permanent sun damage, wrinkles, and skin cancer risk? Absolutely not!

You can save time and avoid these risks entirely with sunless tanning lotion. Today's self-tanners give you a safe, deep golden tan, not the orange look of years ago. Many new self-tanning lotions are tinted; not only do they give you an initial tan, you're more likely to apply the lotion evenly and avoid streaking.

Instructions


  • First, take a shower or bath and exfoliate your skin. Pay special attention to your elbows, knees, and any other rough spots. These areas will soak up the self tanning lotion and turn darker so you need to get rid of any dead skin.
  • Pat yourself dry and pin your hair up. Apply regular body or hand lotion to the dry spots you exfoliated. Allow yourself several minutes to completely dry.
  • You may choose to wear thin gloves to put on the self-tanning lotion and avoid getting it on your hands, but applying it with your bare hands will probably result in a more even application. It's your choice.
  • Start applying the lotion from the bottom, up, bracing your foot on a chair or stool. Rub in lightly, you can always go back later and apply a second time.
  • Don't forget the areas that would tan naturally in the sun, the back of your legs, knees, arms, and neck. When applying to your face, remember to smooth it on your eyelids and into your hairline. Avoid your eyes and hair. For those with sensitive skin, there are self-tanning lotions that are formulated specifically for your face and will result in a more natural look.
  • If you will be wearing your hair up, don't forget to apply the self-tanner on the back of your neck to look more natural.
  • When you're finished, wash your hands thoroughly with soap if you chose not to wear gloves or your palms will turn an unnatural color. Use a hand towel to dry them completely.
  • Before the lotion dries, it may tan what you're wearing too, so let yourself dry and put on some loose clothing. If you're going to be sitting on a cloth chair or couch, sit on a towel to avoid staining.

Quick Tips


  • For a deep, extra-dark tan before a special occasion, apply self tanning lotion before bed, and again in the morning. Before you go out, check yourself in the mirror for any streaks and correct them with a damp paper towel. For the ultimate fake tan, apply bronzing powder to your face and shoulders for a finishing touch and hit the town!
  • Allow at least 10 minutes to apply self-tanning lotion and don't be in a hurry. You're more likely to avoid streaking and get a natural looking tan.

Purple Prickly Pear Mango Butter Soap
