Watermelon Slush

Watermelon is an excellent way to fight fatigue!  Try a glass of watermelon slush after a workout or in the afternoon to fight the afternoon slump.

Watermelon Slush

Ingredients:
8 cups cubed seedless watermelon
1/4 c. lime juice
1/4 c. sugar
2 cups diet lemon-lime soda, chilled

In a blender or food processor, cover and process the watermelon, lime juice and sugar in batches until smooth.  Pour into a freezer-safe container.  Cover the container and freeze the mixture for 30 minutes or until the edges begin to become solid.  Stir and return the mixture to the freezer.  Repeat the stirring process every 20 minutes or until slushy.  This usually takes about 90 minutes.  Spoon 3/4 cup of the slush into bowls or glasses and add 1/4 cup soda to each serving. 
Yeilds Eight Servings.
