Christmas Candy Recipe #5
In the hustle and bustle of the holidays, it is nice to have a great candy recipe that is quick and easy to make. If you are like me, it is difficult to spend a lot of time in the kitchen making your Christmas candy recipes.
No-Fuss Truffles Recipe
Ingredients
2 packages (10 to 12 ounces each) milk chocolate or butterscotch chips
1 carton (8 ounces) frozen whipped topping, thawed
1-1/4 cups ground toasted almonds, graham cracker crumbs or finely chopped salted peanuts
Directions
In a microwave-safe bowl, melt chips; stir until smooth. Cool to room temperature, about 30 minutes, stirring several times.
Fold in whipped topping. Drop by rounded teaspoonfuls onto waxed paper-lined baking sheets. Freeze for 1-1/2 hours or until firm.
Shape into balls; roll in almonds, crumbs or peanuts. Refrigerate or freeze in an airtight container. If frozen, remove from the freezer 30 minutes before serving. Yield: about 4-1/2 dozen.

Christmas Candy Recipe #4
I love caramels!! This recipe sounded so good and is pretty easy to make.
Chocolate Pecan Caramels Recipe
Ingredients
1 tablespoon plus 1 cup butter, softened, divided
1-1/2 cups coarsely chopped pecans, toasted
1 cup (6 ounces) semisweet chocolate chips
2 cups packed brown sugar
1 cup light corn syrup
1/4 cup water
1 can (14 ounces) sweetened condensed milk
2 teaspoons Spice Island® Pure Vanilla Extract
Directions
Line a 13-in. x 9-in. pan with foil; butter the foil with 1 tablespoon butter. Sprinkle with pecans and chocolate chips; set aside.
In a heavy saucepan, melt remaining butter over medium heat. Add the brown sugar, corn syrup and water. Cook and stir until mixture comes to a boil. Stir in milk. Cook, stirring constantly, until a candy thermometer reads 248° (firm-ball stage).
Remove from heat and add vanilla. Pour into prepared pan (do not scrape saucepan). Cool completely before cutting. Yield: about 2-1/2 pounds (about 6-3/4 dozen).

Mocha Truffles Recipe
2 packages (12 ounces each) NestlĂ©® Tollhouse® Semi-Sweet Morsels
1 package (8 ounces) cream cheese, softened
3 tablespoons instant coffee granules
2 teaspoons water
1 pound dark chocolate candy coating, coarsely chopped
White candy coating, optional
Directions
In a microwave-safe bowl, melt chocolate chips; stir until smooth. Add the cream cheese, coffee and water. Chill until firm enough to shape. Shape into 1-in. balls and place on waxed paper-lined baking sheet. Chill for 1-2 hours or until firm.
In a microwave, melt chocolate coating; stir until smooth. Dip balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Melt white coating and drizzle over truffles if desired. Yield: about 5-1/2 dozen.

I've been a little lapse at my blog for the past week. I am currently up to my ears in candles. I am doing a Dance Team fundraiser. I sat down at the computer to look for new candy recipes for Christmas. I will be sharing the recipes I found with my readers. Let me know if you make any of the recipes and how they turned out for you. This is a recipe that the kids can help you make. It is quick and easy!
Caramel Marshmallow Treats Recipe
Ingredients
5 cups crisp rice cereal, coarsely crushed
1 can (14 ounces) sweetened condensed milk
1 package (14 ounces) caramels
1 cup butter, cubed
1 teaspoon ground cinnamon
1/2 teaspoon Spice Island® Pure Vanilla Extract
1 package (16 ounces) large marshmallows
Directions
Line two baking sheets with waxed paper; set aside. Place cereal in a shallow bowl. In a large saucepan, cook and stir the milk, caramels and butter over low heat until melted and smooth. Remove from the heat; stir in the cinnamon and vanilla.
With a toothpick, dip each marshmallow into warm caramel mixture; turn to coat. Press marshmallow bottoms in cereal; place on prepared pans. Let stand until set. Yield: 5 dozen.
