How to prepare the Sole

Sole is a mixture of water and salt. The object is to saturate the water with dissolved salt so it can't hold anymore. You'll know that you've created sole when there are undissolved salt crystals in the water. You can't oversaturate the water with salt. The crystals will simply drop to the bottom of the container.

       Place several Himalayan Crystal Salt stones or Himalayan Crystal Salt granules about an inch deep in a glass container. (A canning jar works well.)

       Cover the salt with two to three inches of pure, spring water. Let the salt dissolve for 24 hours.

       If all the salt dissolves in 24 hours, add more salt to the container. The sole is finished when the water can no longer dissolve the salt and the salt crystals drop to the bottom of the container. There will always be salt crystals in the jar. It doesn't matter if you have only a few crystals or many. The water is saturated and is now sole.

       Cover the container to prevent the water from evaporating. Since salt is a natural preservative, the sole will keep forever. It can't spoil or go "bad".

Lemon Almond Tea

If you enjoy iced tea during the summer, here is a new recipe I found that ya'll might like to try.

Lemon Almond Tea

Ingredients:

2 family size black tea bags
4 cups boiling water
2 lemons, thinly sliced
1 cup sugar
1 tablespoon almond extract
2 teaspoons vanilla extract
1 (2 liter) bottle lemon-lime flavored carbonated beverage, chilled

Directions:
In a saucepan, brew the tea bags in hot water for 15 minutes. While waiting for the tea to brew, squeese the lemon slices as you put them into a large pitcher. Pour in sugar. Pour brewed tea into the pitcher with the sugar and lemons. You can let this sit in the refrigerator for up to one day or drink it right away. When ready to serve, stir in the almond extract, vanilla extract and lemon lime soda.
Yields 12 servings.

Italian Cream Soda

I ran across this drink recipe recently and wanted to share it with all of my readers. I have not tried this recipe yet but will be in the next week or so.

Italian Cream Soda

Ingredients:

8 fluid ounces of carbonated water
3/4 fluid ounces of passion fruit flavored syrup
3/4 fluid ounces of watermelon flavored syrup
1 fluid ounce of half and half (cream)

Directions:
Fill a tall glass half full with ice. Fill to 2/3 with carbonated water. Pour in watermelon and passion fruit flavored syrups, then float the half and half cream on top. Stir when ready to drink.
Serves One

Watermelon Slush

Watermelon is an excellent way to fight fatigue! Try a glass of watermelon slush after a workout or in the afternoon to fight the afternoon slump.

Watermelon Slush

Ingredients:
8 cups cubed seedless watermelon
1/4 c. lime juice
1/4 c. sugar
2 cups diet lemon-lime soda, chilled

In a blender or food processor, cover and process the watermelon, lime juice and sugar in batches until smooth. Pour into a freezer-safe container. Cover the container and freeze the mixture for 30 minutes or until the edges begin to become solid. Stir and return the mixture to the freezer. Repeat the stirring process every 20 minutes or until slushy. This usually takes about 90 minutes. Spoon 3/4 cup of the slush into bowls or glasses and add 1/4 cup soda to each serving.
Yeilds Eight Servings.

Brazilian Lemonade

Ingredients:
2 limes
1/2 cup sugar
3 T. sweetened condensed milk
3 cups water
ice

Directions:
Wash the limes thoroughly. Cut off the ends and slice them into eight wedges. Place them in an electric blender with the sugar, sweetened condensed milk, water and ice. Pulse the mixture five times and pour it through a fine mesh stainer to remove the rinds. Serve over ice.

Yields four servings.

Chuckwagon Salad

I saw the name on this salad and thought it sounded interesting even though you do have to do a little bit of cooking.

Chuckwagon Salad

Ingredients

1 cup uncooked wagon wheel pasta
1 cup sliced, cooked lean sirloin, cold
3/4 cup sliced onion
1/2 cup chopped green bell pepper
2/3 cup barbecue sauce
2 tablespoons Dijon mustard
2 cups red leaf lettuce, rinsed and torn
2 cups green leaf lettuce, rinsed and torn
1 tomato, sliced

Cooking Instructions

Cook pasta in boiling water until al dente. Drain.
In a medium mixing bowl, combine pasta, beef, onion, and green pepper. Mix well. Stir together barbecue sauce and prepared mustard, and mix into beef mixture.
Serve beef mixture over mixed greens, and garnish with tomatoes.

I am always trying to eat healthier and stay away from the cookies, candy, chips, etc. I like to try new combinations of fruit and vegetables so I will definitely be trying out this recipe.

Tropical Cucumber Salad

Ingredients

3-5 teaspoons fish sauce, (see Shopping Tip)
1 teaspoon freshly grated lime zest, plus more for garnish
2 tablespoons lime juice
1 tablespoon canola oil
2 teaspoons light brown sugar
1 teaspoon rice vinegar
1/4 teaspoon crushed red pepper
1 medium English cucumber, cut into 3/4-inch dice
1 avocado, cut into 3/4-inch dice
1 mango, cut into 3/4-inch dice (see Kitchen Tip)
1/4 cup chopped cilantro

Preparation

Whisk fish sauce to taste, lime zest, lime juice, oil, brown sugar, vinegar and crushed red pepper in a large bowl until combined. Add cucumber, avocado, mango and cilantro; gently toss to coat. Serve garnished with lime zest, if desired.

Shopping Tip: Fish sauce is a pungent Southeast Asian condiment; find it in large supermarkets and Asian markets.

Cilantro Pesto Pasta Salad

1 pound rigatoni or other small pasta
1/2 cup olive oil
1 cup fresh cilantro leaves, washed, loosely packed
2 cloves garlic, crushed
1/4 teaspoon dried oregano leaves
1/4 cup pine nuts
1/2 cup sliced black olives
Salt and freshly ground pepper to taste

Directions:

Cook rigatoni according to package directions, drain well.
In blender container, blend oil, cilantro, garlic and oregano until smooth.
Toss pasta with dressing; toss in pine nuts and olives; season to taste with salt and pepper. Cover and refrigerate. Toss again before serving.

Pasta Ingredients:

8 ounces (2 1/3 cups) uncooked dried penne pasta

Salad Ingredients:

1/4 pound (1 cup) Cheddar or Monterey Jack Cheese, cubed 1/2-inch
2 medium (2 cups) tomatoes, cubed 1-inch
2 medium (2 cups) zucchini, sliced 1/4-inch

Dressing Ingredients:

1/2 cup Italian vinaigrette dressing
1 tablespoon fresh oregano leaves
1 tablespoon chopped fresh basil leaves
Lettuce leaves

Choose vine-ripened tomatoes to pair with penne pasta.
Directions:

Cook pasta according to package directions. Rinse with cold water; drain.
Combine pasta and all salad ingredients in large bowl.
Stir together all dressing ingredients except lettuce leaves in small bowl. Add dressing to salad; toss to coat. Cover; refrigerate at least 30 minutes. Serve salad on lettuce leaves.

Chicken Salad

Chicken Salad

Ingredients:

6 boneless, skinless, split chicken breasts
1 cup white wine
1/2 cup chicken broth or water
2 cloves garlic, minced
1/4 teaspoon dried tarragon
1/4 teaspoon dried basil
6 cups torn mixed salad greens
1 can (14 ounces) hearts of palm, drained, cut into bite-size pieces
1 medium tomato, seeded and chopped
1 red onion, cut into thin rings
1/4 cup balsamic vinegar
1/4 teaspoon each, dried tarragon, thyme and basil
1/3 cup olive oil
2 tablespoons Dijon mustard
1 clove garlic, minced
1/4 teaspoon salt
1/2 teaspoon crushed red pepper

Directions:
Combine chicken, wine, broth, garlic, tarragon and basil in a 2-quart saucepan. Cover and simmer about 15 to 20 minutes, or until done. Set aside to cool in liquid. Drain chicken and cut into 1-inch strips.
To make dressing, combine vinegar, herbs, olive oil, mustard, garlic, salt, and red pepper in a cruet or a screw top jar. Shake well to blend; refrigerate and let stand at least 15 minutes. Can be made ahead.
Combine salad greens, hearts of palm, tomato, onion and chicken. Toss with chilled dressing, mixing thoroughly. Serve on lettuce lined platter or individual serving plates. Garnish with additional tomato wedges or hearts of palm, if desired.
6 servings.

Alaska Salmon Salad Sandwich

15 1/2 ounces canned Alaska salmon
1/3 cup plain nonfat yogurt
1/3 cup chopped green onions
1/3 cup chopped celery
1 tablespoon lemon juice
Black pepper, to taste
12 slices bread

Directions:
Drain and flake salmon. Stir in remaining ingredients except pepper and bread. Season with pepper to taste. Spread salmon mixture on half of bread slices; top with remaining bread. Cut sandwiches into halves or quarters.
Serves 6 sandwiches

ABC Sandwich Recipe

It is HOT here in Texas!! So, I decided to surf the net for new recipes that I don't have to cook! I will be sharing these new recipes with my readers.

ABC Sandwich

Ingredients:

1 cup mayonnaise
1/2 cup minced scallions
2 tablespoons brandy
1/4 teaspoon coarsely-ground black pepper
18 slices toasted whole-wheat bread
Leaf lettuce
12 ounces crab meat, picked over well to remove any shells
Tomato slices
12 slices slab bacon, cut in half, cooked crisp and drained
2 avocados, sliced

Directions:
In a small bowl, combine the mayonnaise, scallion and brandy, mixing well. For each sandwich, spread three pieces of bread with a portion of the mayonnaise mixture. Cover the first slice of bread with lettuce leaves, 2 ounces of crabmeat, and one or two tomato slices. Add the second slice of bread, and top with the four half-slices of bacon, a layer of avocado slices, another tomato slice or two, and more lettuce. Cover with the third slice of bread, secure the sandwich with wooden picks, if you like, and slice it in half.
Serve the sandwiches immediately.

Good Afternoon to all of my readers. I ran across an interesting article the other day and decided to share it with ya'll. In the summer, I love to get a suntan. I like the way my skin looks when it is a darker color. I'm sure that most of you do also. But, as we know, it is unhealthy for us to expose our skin to all of those UV rays (even though most of us do it anyway). Anyway, I came across this article on "How To Fake a Tan: Sunless Tanning Tips.

A great suntan is associated with health and beauty. While a bronze look is desirable, especially in the summer or on holiday , we all know the dangers of the sun's UV rays. Is a temporary tan worth the permanent sun damage, wrinkles, and skin cancer risk? Absolutely not!

You can save time and avoid these risks entirely with sunless tanning lotion. Today's self-tanners give you a safe, deep golden tan, not the orange look of years ago. Many new self-tanning lotions are tinted; not only do they give you an initial tan, you're more likely to apply the lotion evenly and avoid streaking.

Instructions

First, take a shower or bath and exfoliate your skin. Pay special attention to your elbows, knees, and any other rough spots. These areas will soak up the self tanning lotion and turn darker so you need to get rid of any dead skin.
Pat yourself dry and pin your hair up. Apply regular body or hand lotion to the dry spots you exfoliated. Allow yourself several minutes to completely dry.
You may choose to wear thin gloves to put on the self-tanning lotion and avoid getting it on your hands, but applying it with your bare hands will probably result in a more even application. It's your choice.
Start applying the lotion from the bottom, up, bracing your foot on a chair or stool. Rub in lightly, you can always go back later and apply a second time.
Don't forget the areas that would tan naturally in the sun, the back of your legs, knees, arms, and neck. When applying to your face, remember to smooth it on your eyelids and into your hairline. Avoid your eyes and hair. For those with sensitive skin, there are self-tanning lotions that are formulated specifically for your face and will result in a more natural look.
If you will be wearing your hair up, don't forget to apply the self-tanner on the back of your neck to look more natural.
When you're finished, wash your hands thoroughly with soap if you chose not to wear gloves or your palms will turn an unnatural color. Use a hand towel to dry them completely.
Before the lotion dries, it may tan what you're wearing too, so let yourself dry and put on some loose clothing. If you're going to be sitting on a cloth chair or couch, sit on a towel to avoid staining.

Quick Tips

For a deep, extra-dark tan before a special occasion, apply self tanning lotion before bed, and again in the morning. Before you go out, check yourself in the mirror for any streaks and correct them with a damp paper towel. For the ultimate fake tan, apply bronzing powder to your face and shoulders for a finishing touch and hit the town!
Allow at least 10 minutes to apply self-tanning lotion and don't be in a hurry. You're more likely to avoid streaking and get a natural looking tan.

Texas Adventures Part 6 - McKinney, Texas

Well, it has been quite awhile since I've written a Texas Adventure. Life can get extremely busy now and then and certain things have to be put on the back burner.
But . . . now it is time to take another Texas Adventure to McKinney, Texas.

McKinney is located 30 miles north of Dallas. There is an extremely large Historic Downtown with quaint boutique shops, a large variety of dining options and entertainment. McKinney hosts a large number of seasonal events which includes Red White & BOOM, the Killis Melton Ice Cream Cran-Off, Oktoberfest, and Dickens of a Christmas. Also during the Christmas holidays, plan to attend Home For The Holidays and the Chestnut Square Holiday Tour of Homes.
Let's go exploring now . . You can attend performances or art shows at the McKinney Performing Arts Center which is housed in the historic Collin County Courthouse; find a treasure at Third Monday Trade Days; experience the city's history at the Heard-Craig House, the Chestnut Square Historic Village, the North Texas History Center and the Pecan Grove Cemetary. Now, it is time to commune with nature at the Heard Natural Science Museum and Wildlife Sanctuary where you can take a walk on the nature trails or check out the rope course and the zip line. Then, it is on to the changing exhibits and the annual visit of Dinosaurs Alive!
Next, we are on to visit the McKinney wineries! 1st stop is the Landon Winery, located at 101 N. Kentucky, 2nd stop is the Lone Star Wine Cellars located at 103 W. Virginia, 3rd stop is the Wales Manor Winery located at 4488 CR 408 (east of Highway 5/north of U.S. 380); 4th and final stop is Zin Zen Wine Bar & Bistro located at 6841 W. Virginia Parkway.
Now we are off to The Dr Pepper StarCenter McKinney at Craig Ranch, which has two sheets of ice, a full-service StarStuff pro shop, a snack bar and four meeting rooms. The StarCenter will be the home to two hockey associations -- the McKinney Ice Hockey Club which fields teams in the AT&T High School Hockey League, and the Texas Aces, which fields travel teams of all ages in the North Texas Hockey League.
It's outdoor time next! We are visiting Towne Lake Recreation Area. This picturesque city park features a 22-acre lake with swan paddle boats, lighted hike/bike trails, two picnic pavilions, restroom/concession services, playground, two sand volleyball courts, nine lighted horseshoe courts, fishing pier, six lighted recreation softball/baseball fields. Park is handicapped accessible. The park is located at 1405 Wilson Creek Parkway @ Central Expressway. You definitely have to try the Duck/Swan Paddle Boat Rentals at Towne Lake: $15 per boat for 30 minutes. Up to 4 people on bigger boats, 3 people per duck or swan. Children must be 36 inches tall. Open weekdays 3 p.m to dark and weekends 11 a.m. to dark. Open earlier weekdays after Memorial Day.

Being a Mom - A Journey Unlike No Other

OK~ So you think you want to be a Mom? As a Mom to a twenty year old son and a soon to be 16 year old, this Momʼs advice is, “Hang on Tight, and Pray, Pray, Pray!” My boys have given me much joy, as well as a few tears along the way. Life is truly a journey AND itʼs up to YOU to decide how much joy you will have in the journey!

Iʼm thinking.......5 top reasons why being a Mom is truly the best job in the world-

1. In what other occupation is it OK to be up for more than 24 hours straight while snuggling with a little baby and a cozy blanket? A wonderful time in a Momʼs life, as well as her childʼs.

2. Singing, Singing, Singing. There are many Moms who are professional singers. Although they may not be recognized by the Grammy Association, yet their children think they have the BEST voices in the world!

3. A toy tester....There are not many positions within the workforce that say, “OK, test all these toys to make sure the batteries are charged!” Lets face it, Moms get to play a lot....and the smiles on a youngster are truly priceless and more.

4. And then there comes the day when we get to toss the car keys to our kids and say, “Drive Safe!” This is where a TON of prayer comes into play, need I say more?

5. The day the diploma is in hand- This is the day where a few tears are shed and as a Mom you know you have done the best job you could.

You may ask, “What is so hard about that?” Well, this is 18 years worth of dedication and love! Life is a journey and it truly is what we make out of it! You can let others decide the path of your life OR you can take the reigns and be in control. I have chosen to be in control, while knowing the man upstairs is walking next to me every step of the way. It is through my faith and a supportive husband that I have walked through this journey of Motherhood.

Iʼm proud of the fact that I live in Iowa...in the country....where the air is clean and my boys are growing into responsible (I know there is hope) individuals! Life is a roller coaster and I have savored every moment......Life is good....Enjoy the ride.......Become a Mom....Youʼll be glad you did! After All, Itʼs All In a Momʼs Day, Right?

Texas Adventures Part 5 - Decatur, Texas

Hello ya'll!! Are you ready to set out on another adventure? Here we go....

Decatur, Texas is located at the junction of US Highway 81/287 and Highway 380 in Wise County. Travel time from the Dallas/Fort Worth is 45 minutes. Take a step back in time when you visit historic Downtown Decatur. Stand in awe of the James Riley Gordon, 1896 Wise County Courthouse and then meander your way over to the newly opened Decatur Visitors Center located in the historic 1939 WPA Post Office Building. Then make your way over to the Wise County Heritage Museum. Formerly the Administration Building for the Decatur Baptist College, the building now houses the Wise County Heritage Museum, Little Theatre, Lost Battalion Room and Wise County Archives. The building was erected in 1892 of native limestone to house a four year college. In December of 1967 the building and one acre were deeded to the Wise County Historical Society by Coke L. Gage. Next on our tour is "El Castile". "The Castle" was built in 1883 by cattle baron Dan Waggoner and was once headquarters to the vast Waggoner ranching empire in North Texas. The house boasts 16 rooms and a full basement with 8 wood-burning fireplaces. It is constructed of fossibiferous limestone decorated with hand hewn wrought iron on the roof and balconies. The entrance hall has a grand staircase winding to the second floor with Texas star motifs decorating the walnut & oak stairway and other woodwork throughout the house. Massive interior doors stand 16 feet tall, 3 have stained glass. The Victorian library displays wrought iron isinglass fixtures from Denver. The house has a large dining room, 8 bedrooms, 5 marble bath and a huge kitchen with a copper sink and fixtures. The house was the model for the home in the movie "Giant". The home Thistle Hill in Fort Worth was a wedding present to Dan's Daughter Electra in 1902. El Castile was purchased by Phil Luker Sr. in 1944 and remains in the Luker family to this day. It is privately owned and not available for public viewing. And, not to be missed, is the Texas Tourist Camp. Local Businessman C.F. Boydston purchased this site, a former feed lot in 1927. Recognizing a potential business opportunity offering services to the traveling public, he built a wooden shed and gas station in 1927. Travelers were allowed to build campfires during overnight stays and by 1931 Boydston added three wooden cabins with garages to the camp complex. The building were later faced with rock and more cabins were added in 1935. The original wooden gas station was covered with petrified wood in 1935 when the highway was widened and remained in operation by the Boydston family until 1988. The Texas lunchroom was built in 1929 and renamed the Texas Cafe' in 1935. It was a popular hangout with high school and college students of the time as well as a destination for the traveling public. Trains often stopped for engineers and passenger to get a bit to eat. Part of the Complex is now occupied by private offices. The now Whistle Stop Cafe' has once again become a hangout for locals. The Texas Tourist Camp is one of the few intact example of tourist camps built throughout Texas in the mid 20th century. The Complex is listed in the National Register of Historic Places.
Decatur hosts many Special Events throughout the year. Cruise Nights on the Courthouse Square is held the 1st Saturday of the Month- May to October (excluding July). Stores and restaurants stay open late and streets are closed to traffic. The Chisholm Trail Days Western Heritage Event is held in the month of June. Moonlight Madness is held the first part of December with a parade, carriage rides around the downtown square and kids activities.
Next on our journey is a stop at beautiful Lake Bridgeport. North Side Marina and Resort is located in deep water at the north end of beautiful Lake Bridgeport tucked away in a wooded lake front setting adjacent to Moonlight Bay, Sunset Bay, and North Star Pointe. North Side Marina and Resort offers many services including 1 to 4 Bedroom Cabin Rentals, Boat Rentals, Slip Rentals, RV Sites, Ship's Store, Gift Shop, Fishing and 24 hour boat fuel to Lake Bridgeport Residents and Visitors.
Time to rest those tired feet? Then check into the Abbercromby Bed & Breakfast Suites. They also offer therapeutic massage, neuromuscular and myofascial therap, Swedish massage, reflexology, sports injury massage and tripper point massage. That, in itself, sounds like a winner to me!

Texas Adventures Part 4 - Graham, Texas

Howdy Ya'll! Are you ready for our next Texas Adventures? Today we are visiting Graham, Texas.

Graham, Texas has America's Largest Downtown Square. Graham is located 90 minutes from Fort Worth and is nestled in the beautiful North Texas Hill Country. Graham is only a short distance from Possum Kingdom Lake. Graham is where the stories portrayed in Lonesome Dove, The Searchers, and Black Fox took place. I don't know about you, but I LOVED Lonesome Dove! While in Graham, you can visit Fort Belknap, stop by the Old Post Office Museum and Art Center, and check out a rodeo at the Young County Arena. Fort Belknap was the northern anchor of a series of U.S. Army Forts stretching from the Red River to the Rio Grande, built to protect the Texas frontier. Troops from Fort Belknap pursued raiding bands of Indians allowing for settlement of the area. The Fort became the hub network of roads, most notably the Butterfield Overland Mail route. Fort Belknap was abandoned during the Civil War, reoccupied briefly after the war, then abandoned for the last time in September 1867. Some buildings have been restored and offer a popular site for group gatherings. Best of all it has free admission! For those of you who love the outdoors, you can ride a horse at one of the area ranches, go bike riding through the countryside, hunt, or go fishing on Lake Graham or Lake Eddleman. There are two public boat ramps on Lake Graham and one on Lake Eddleman. Camping sites and picnic areas are located along the shoreline of Lake Eddleman. Predominant fish species include Largemouth Bass, White Crappie, Hybrid Striped Bass, White Bass, and Channel Catfish. Shopping enthusiasts will love the large downtown square with all of the many distinctive shops. Other shopping opportunities include the developing Old Town area where the old Coca Cola bottling plant, now a retail store, stands as the centerpiece. For a fun adventure in the evening, plan to take in a move at the Graham Drive-In Theatre, one of the handful of outdoor movie theatres still operating in Texas. The drive-in features first-run or recent releases. Do you love attending flea markets? Then you will love Fourth Monday Trades Days that takes place in Graham monthly. Vendors from all over the area offer almost anything you can imagine - unique gifts, home decor, clothing, accessories, sporting goods, antiques, tack, tools, and much much more. Looking for a one of a kind place to stay? Then check out the Wildcatter Ranch & Resort. The guest ranch is located just south of Graham on the some of the most scenic landscape in the North Texas Hill Country. Guests can enjoy horseback riding, canoeing, archory, biking, and hiking.

And our Texas Adventures continues with Weatherford, Texas!

The town of Historic Weatherford is located 26 miles west of Ft. Worth on I-20. In Weatherford, you can take a nostalgic driving tour that takes you through tree-lined streets with Victorian and turn-of-the- century homes. The historic downtown area has various quaint antique and specialty shops that are in restored buildings. Annual events include the Sheriff's Posse Rodeo in June; the Parker County Peach Festival and Peach Pedal Bike Ride on the second Saturday in July; the Candlelight Tour of Home, Christmas on the Square and Christmas Parade in December. Another fantastic event not to be missed is the First Monday Trade Days held every Friday, Saturday and Sunday proceeding the first Monday of each month.
Make sure that you don't miss visiting the Chandor Gardens. Chandor Gardens was built by famed English portrait artist Douglas Chandor for his Weatherford bride. The Gardens capture both the elegance of a formal English garden and the ornate design of Chinese architecture. From the 30-foot waterfall to soothing fountains, from a bowling green to secret hideaways, Chandor Gardens will capture your awe and wonder at every turn. Another must see is the Museum of the Americas. It is located in historic downtown Weatherford. The Museum features the rich heritage and living traditions of indigenous peoples from Native America, Mexico, and Latin America. Discover how the Eskimos of Alaska and Canada developed crafts and a way of life very different from the tribes of the Amazon; or how the Plains Indians followed the buffalo while the Aztecs built great civilizations. The Museum offers hundreds of artifacts, masks, ceramics, costumes, toys and more, of interest to people of all ages. And last but not least are the Clark Gardens Botanical Park. These spectacular gardens will awaken your senses to the natural wonders of Texas. Clark Gardens began in 1977 and opened to the public in 2000, as the personal dream of Max and Billie Clark. Open daily, year-round, visitors can wade through a sea of rainbow-hued iris, relax in the perfumed shade of a rose arbor, or stroll along the flower-laden banks of a sun dappled pond. By using Texas adaptive plants and through an extensive system of conserving and collecting water Clark Gardens hopes to inspire and educate those that visit.
Did you love the show "Dallas" (like I did, never missed an episode!)? Well, Weatherford is where Larry Hagman, "J.R. Ewing", grew up. On the historic homes tour, you will see Mary Martin's (Larry's mother) home.
Weatherford has a City population of 24,000 and a County population of 112,000. Weatherford is known for it’s community and family oriented way of life that makes it one of the premier places to live in the north Texas area.

Texas Adventures Part 2 - Gainseville, Texas

Next on my Texas Adventures is Gainesville, Texas. Gainesville is where Texas begins! It is the home of the World Renowned Frank Buck Zoo. There are many exciting exhibits and the zoo is centered in Leonard Park. Leonard Park has a community playground, a park pavilion, a pool and train rides throughout the park. Gainesville also has the largest number of Victorian homes and architecture in the Gainesville Historic District. These homes were built in the late 1800's and early 1900's and are home to many local residents. Tours are available on the Gainesville Trolley. Gainesville's Historic Square is full of a variety of shops that include antiques, art galleries, jewelry stores, unique gift items, clocks, apparel boutiques and much more! There are quaint tea rooms, hometown diners, a pub and the Famous Fried Pie Co. Stop by the Morton Museum and the Sante Fe Depot Museum. You can also catch a classic move or live production at the restored State Theater. Gainesville is also home to the North Central Texas College.
Just a mile across the border in Oklahoma, you can visit the Winstar World Casino. Winstar is one of North America's largest casinos with eight casinos in one location. Along with the casinos, Winstar offers great entertainment, from comedians to recording artists, in their 2,500 seat Global Event Center. (I've been there about 10 times now and it is a fun time!) Didn't get enough shopping in downtown Gainesville? Then visit the Gainesville Outlet Center that sits right off of Interstate 35.

Hi to all of my followers! I've been giving some thought to what I'd like to share with my readers and I thought it would be nice to give everyone an insight to life in "Big D" (Dallas, Texas) and also Texas in general. So I am beginning my Texas Adventures series. Hope ya'll enjoy!

I am going to begin this journey with the city of Denton, Texas. Denton is located 35 miles north of Dallas on I-35. Denton is home to 119,454 people. The U. S. Census Bureau has ranked Denton in the top twenty five of the fastest growing cities in the nation. Denton is the Redbud Capital of Texas, so named for the many Redbud trees in and around the city. In 2006, Money magazine named Denton No. 58 out of the "Top 100 Best Places to Live in America." Denton is sometimes referred to by its nickname "Little D". (a reference to "Big D" - that'd be Dallas, of course!)
Denton's downtown is centered around the 1896 Courthouse. The Courthouse is home to the Courthouse-on-the-Square Museum. It has one of kind exhibits. Nearby, you can step into the Victorian age at the Bayless-Selby House Museum. It is located in the Historical Park of Denton County. Two other galleries that host art shows throughout the year are the Firefighter Museum and the Denton Center for Visual Arts. Next, check out Texas' finest talent at the beautiful Campus Theatre.
Denton is home to two universities, University of North Texas and Texas Women's University.

Chocolate Mini Cheesecakes

Ingredients:

CHOCOLATE CRUMB CRUST(recipe follows)

1/2 cup HERSHEY'S Cocoa

1/4 cup (1/2 stick) butter or margarine, melted

3 packages (8 oz. each) cream cheese, softened

1 can (14 oz.) sweetened condensed milk (not evaporated milk)

3 eggs

2 teaspoons vanilla extract

CHOCOLATE GLAZE(recipe follows)

Directions:

1. Heat oven to 300°F. Line muffin cups (2-1/2 inches in diameter) with paper bake cups or spray with vegetable cooking spray.* Press about 1 tablespoonful CHOCOLATE CRUMB CRUST mixture onto bottom of each cup.

2. Stir together cocoa and 1/4 cup butter. Beat cream cheese until fluffy. Beat in cocoa mixture. Gradually beat in sweetened condensed milk. Beat in eggs and vanilla. Fill muffin cups with batter.

3. Bake 35 minutes or until set. Cool 15 minutes; remove from pan to wire rack. Cool completely. Refrigerate. Before serving, spread with CHOCOLATE GLAZE. Allow to set. Serve at room temperature. About 24 mini cheesecakes.

CHOCOLATE CRUMB CRUST: Stir together 1-1/2 cups vanilla wafer crumbs (about 45 wafers, crushed), 6 tablespoons HERSHEY'S Cocoa, 6 tablespoons powdered sugar and 6 tablespoons melted butter or margarine in medium bowl.

CHOCOLATE GLAZE: Melt 2 cups (12-oz. pkg.) HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips with 1 cup (1/2 pt.) whipping cream and 1 teaspoon vanilla extract in medium saucepan over low heat. Stir until smooth. Use immediately. About 2 cups glaze.

*If vegetable cooking spray is used, cool baked cheesecakes. Freeze 15 minutes; remove with narrow spatula.

Sweetheart Chocolate Cupcakes

Ingredients:

2 cups sugar

1-3/4 cups all-purpose flour

3/4 cup HERSHEY'S Cocoa

1-1/2 teaspoons baking powder

1-1/2 teaspoons baking soda

1 teaspoon salt

2 eggs

1 cup milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

Vanilla frosting (homemade or ready-to-spread)

Few drops red food color (optional)

1/4 cup chopped maraschino cherries (optional)

Decorative themed candies, colored sprinkles or sugars (optional)

OPEN CHOCOLATE HEARTS (directions follow)

Directions:

1. Heat oven to 350°F. Line about 30 muffin cups (2-1/2 inch in diameter) with paper or foil baking cups.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Fill cups 2/3 full with batter.

3. Bake 22 to 25 minutes or until wooden pick inserted in centers comes out clean. Cool completely in pans on wire rack.

4. Frost with vanilla frosting or tint all or part of frosting with a few drops of red food color to get pink. Stir in chopped maraschino cherries, if desired. (For best results, dry cherries thoroughly on paper towels.) Garnish with decorative candies, sprinkles and OPEN CHOCOLATE HEARTS, if desired. About 30 cupcakes.

OPEN CHOCOLATE HEARTS:

Cover tray or cookie sheet with waxed paper. Place 1 cup HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips in medium microwave-safe bowl. Microwave at MEDIUM (50%) 1 minute; stir. If necessary, microwave at MEDIUM an additional 15 seconds at a time, stirring after each heating, until chips are melted and smooth when stirred. Spoon melted chocolate into small squeeze bottle, pastry bag or strong resealable plastic food storage bag fitted with writing tip*. Pipe freehand hearts or follow patterns by drawing heart shapes on paper that is slipped under the waxed paper. Refrigerate hearts about 30 minutes or until firm.

* Plastic food storage bags can be used without the writing tip. Simply fill bag and then snip off a very small section of one bag corner. (2 ratings)

Black Forest Mini Cheesecakes

Ingredients:

18 to 24 vanilla wafer cookies

2 packages (8 oz. each) cream cheese, softened

1-1/4 cups sugar

1/3 cup HERSHEY'S Cocoa

2 tablespoons all-purpose flour

3 eggs

1 container (8 oz.) dairy sour cream

1/2 teaspoon almond extract

SOUR CREAM TOPPING(recipe follows)

canned cherry pie filling, chilled

Directions:

1. Heat oven to 325°F. Line muffin cups (2-1/2 inches in diameter) with foil bake cups. Place one vanilla wafer (flat-side down) in bottom of each cup.

2. Beat cream cheese in large bowl until smooth. Add sugar, cocoa and flour; blend well. Add eggs; beat well. Stir in sour cream and almond extract. Fill each muffin cup almost full with batter.

3. Bake 20 to 25 minutes or until set. Remove from oven; cool 5 to 10 minutes. Spread heaping teaspoon SOUR CREAM TOPPING on each cup. Cool completely in pan on wire rack; refrigerate. Just before serving, garnish with cherry pie filling. Cover; refrigerate leftover cheesecakes. 1-1/2 to 2 dozen cheesecakes.

SOUR CREAM TOPPING: Stir together 1 container (8 oz.) dairy sour cream, 2 tablespoons sugar and 1 teaspoon vanilla extract in small bowl until sugar is dissolved.

Valentine's Day !! Pink Coconut, Triple Chocolate, and Square Truffles

I love Valentine's Day! I have decided to find some new, fun and flirty recipes this year. I will be sharing these recipes with my readers. If you try any of these recipes, make sure you leave a comment in the comment section of the recipe. Enjoy!!

Pink Coconut, Triple Chocolate and Square Truffles

Ingredients

10 oz. semisweet chocolate, chopped

1/2 cup whipping cream

1/4 cup butter, cut up

2 cups shredded coconut

Pink gel food coloring or red food coloring (optional)

6 oz. chocolate-flavored candy coating, cut up

1/4 cup white chocolate baking pieces

1 tsp. shortening

Directions

1.In a medium microwave-safe bowl combine semisweet chocolate, whipping cream, and butter. Microcook, uncovered, on 100 percent power (high) for 1 minute. Remove from microwave and stir until smooth. If necessary, return chocolate mixture to microwave and cook on high for 30 seconds more; stir until smooth. Use to make Coconut Truffles, Triple Chocolate Truffles, or Square Truffles. Let truffles stand at room temperature for 15 minutes before serving.

2.PINK COCONUT TRUFFLES: After melting chocolate mixture, stir 2/3 cup coconut into the chocolate mixture. Cover bowl and refrigerate for 1-1/2 hours. Line two baking sheets with nonstick foil or lightly greased foil. Drop chocolate mixture from rounded teaspoons onto prepared sheets. Cover with waxed paper; freeze for 10 minutes. Meanwhile, tint remaining coconut, if desired, by combining coconut and 1 to 2 drops of gel pink food coloring or red food coloring; toss until coconut is tinted. Roll the chocolates between the palms of your hands into round balls, wetting hands if necessary. Roll the chocolate balls in remaining coconut; cover and refrigerate. Makes 35 truffles.

3.TRIPLE CHOCOLATE TRUFFLES: After melting chocolate mixture in Step 1, above, cover bowl and refrigerate for 1-1/2 hours. Line two baking sheets with nonstick foil or lightly greased foil. Drop chocolate mixture from rounded teaspoons onto prepared sheets. Cover with waxed paper; freeze for 10 minutes. In a small microwave-safe bowl microcook the chocolate-flavored candy coating on high for 1 minute. Stir until smooth. If necessary, return to microwave and cook on high for 30 seconds more; stir until smooth. Using a fork, quickly dip the chocolate balls, one at a time, into coating. Draw the fork across the rim of the bowl to remove excess coating. Return to baking sheet. Let stand about 30 minutes or until coating is set. In another small bowl combine the white chocolate baking pieces and the shortening. Microcook on high for 30 seconds; stir until melted. If necessary, return to microwave and cook on high for 15 seconds more; stir until smooth. Drizzle over tops of chocolate-covered truffles. Let stand until set. Refrigerate truffles, tightly covered, up to 2 weeks. Makes 35 truffles.

4.SQUARE TRUFFLES: Line an 8-inch-square baking pan with nonstick foil or lightly greased foil, extending foil over edges of pan; set aside. Melt chocolate, whipping cream, and butter as in Step 1. Pour 3/4 cup chocolate mixture in prepared pan. Spread evenly. Sprinkle coconut evenly over chocolate layer. Pour remaining chocolate mixture over coconut; spread evenly. Freeze 1 to 48 hours. Use edges of foil to lift chocolate from pan. Cut chocolate into 36 squares. Place about 1/3 cup cocoa powder in a small bowl. Dredge truffles in cocoa powder. Refrigerate until 15 minutes before serving. Makes 35 truffles.
